A client passed this recipe along to me and like most things I had to re-create it so that I could actually eat it. For me, that meant using 1 pouch (2 cups) of vegan broth from Fodmap (free of onion, garlic, and gluten) and 2 cups of water to cut down on sodium and lighten the flavors, etc. I also used the entire container of Trader Joes steamed lentils (added in the last 10 minutes) vs uncooked lentils.
